Easy Roasted Beef Tenderloin
Ingredients
2–3 lb beef tenderloin
2 tbsp olive oil
3 cloves garlic, minced
1 tsp salt
1 tsp black pepper
1 tsp dried thyme or rosemary
Instructions
Preheat oven to 425°F (220°C).
Pat the beef dry with paper towels.
Rub all over with olive oil, garlic, salt, pepper, and herbs.
Place on a rack in a roasting pan or on a lined baking sheet.
Roast for 35–40 minutes, or until desired doneness.
Let rest for 10 minutes before slicing and serving.
